Cinco de Mayo means Cabo Chips!

It’s almost Cinco de Mayo! I can not believe that today is the first day of May! With Cinco de Mayo right around the corner, it is time to start thinking of the yummy (but healthy!) things to serve family and friends! It’s not always easy to find delicious and healthier options. But, I recently had the opportunity to try samples of the Cabo Chips and I love them! Actually, they were a hit with my whole family and didn’t last very long in our house! My favorite were the Mango Chili Lime but my son loved the Original ones! They are..well..yummy!!

Born on the beautiful beaches of Baja, Mexico, Cabo Chips are 100% whole grain classic cantina style tortilla chips and are inspired by the boldly vibrant atmosphere of Cabo San Lucas. A delicious fusion of the old and the new, these all natural chips are cooked the traditional way – cut from fresh tortillas that are batch cooked for a true cantina crunch! Cabo Chips use only real ingredients, no “flavorings,” for authenticity you can taste.

I love that these chips are Non-GMO verified, organic, 100% whole grain, vegan, gluten-free, and kosher. In fact, their original flavor has only five ingredients (and you can easily pronounce them all!) Now, how cool is that?!

DIY Tortilla Chip Recipe From Cabo Chips

Ingredients:

-Corn flour or Corn masa

-Canola, grapeseed or corn oil. Cabo Chips loves rice bran oil for a healthier alternative.

Combine hot water with the corn flour or masa. Water will vary so start with 1 1/4 cups and add more if necessary.

Use a tortilla press (they can be purchased at a local market) to press the doughy mixture into a thin sheet. You can do it by hand, but we don’t recommend thick tortillas for chips.

Cook the tortillas in a pan or griddle until there are even toast marks Let the tortillas rest for an hour or two Cut the tortillas into your desired shape such as triangles Place a thick coat of oil into a pan and heat.

Drop the cut tortillas into the heated oil of your choice frying them until golden brown on each side Season to taste with salt.
