Remove from pan, and let stand for 5 minutes. Unwrap chicken and shred; refrigerate for 30 minutes or until cold.
  • ·         Combine mayonnaise and the next 7 ingredients (through black pepper) in a large bowl, stirring with a whisk until combined. Add chicken, 1/3 cup celery, cranberries, and almonds; toss well to coat. Cover and refrigerate for 1 hour. Serve over salad greens.

jillian michaels’ tips

1) This new year have more fun with your fitness. Staying healthy and in shape shouldn’t be about foods you have to cut or spending hours in a gym, getting healthy can still be fun! Instead of working out in a gym, get outside and mix it up during the week. Go for an outdoor hike, bike ride, try skiing or take your friends with you to the gym and  try a new class like my new Bodyshred™!

2) It’s not about completely eliminating food groups or opting for famine in the new year. Enjoy foods that taste great and are better for you. popchips are a perfect example and my favorite go to snack. They now come in 14 flavors so grab a different flavor for work, during the day,  when hunger strikes, or for a quick snack. Grab your bag and enjoy!

3) It’s not just about the cardio training. Many people believe if they run for an hour they are shedding the pounds. The reality is your body gets used to this type of activity. Strength training is a great way boost your metabolism. If you do strength training four times a week, you can increase your metabolism by 6-7 percent! Taking a fun weekend boot camp class gets you outside and meeting new people who are trying to accomplish the same goals. Plus switching up your workout keeps it fun.

4) Making wiser eating choices doesn’t mean you have to skip the fun traditions like taco night. When picking out your main dish options, always go with lean organic meat whenever possible. Lean turkey and grilled chicken are great options. and if you love beef in your taco, just make it half lean grass fed organic beef and half turkey meat for a better option that still tastes great. Having a burger night? Instead of piling on the condiments, which are full of calories and high fructose corn syrup, try adding sliced avocado. They are full of healthy fats that are good for your body and skin! (then add a side of popchips instead of french fries.)

We have teamed up with our friends at popchips for a Healthy Happy New Year Giveaway! One reader will win a case of yummy popchips and a signed Jillian book! You must be a subscriber of SoCal City Kids to enter! Next, leave a comment below with one of your own healthy tips! Deadline to enter is January 12th, 2014. One winner will randomly be selected from all entries!

Simon Youth Foundation seeks applicants for $1 million in scholarships

For a fourteenth straight year, Simon Youth Foundation, a national nonprofit that provides educational opportunities for at-risk high school students, will award a college scholarship to one student from every community that is home to a Simon property.

Simon Youth Foundation Community Scholarships are awarded through the Simon Youth Scholarships program and in partnership with local Simon properties. The application period is open now until Saturday, January 11, 2014.

Locally, students can pick up a copy of a scholarship application at the Simon Guest Services Center at Brea Mall, The Shops at Mission Viejo or Westminster Mall in Orange County, or Del Amo Fashion Center in Los Angeles. Applications also can be downloaded at the SYF website at: www.syf.org/our-initiatives/scholarships/community-application.

Any student who will be graduating in the class of 2014 and lives within 50 miles of a Simon property is eligible. The program will award a one-time scholarship of up to $1,500 to students who plan to enroll in an accredited college, university, vocational or technical school.

In addition, ten regional awards called “Award of Excellence” will be given to top candidates. The regions eligible are Atlanta, Austin, Boston, Dallas, Indianapolis, Miami, New York, Orange County (CA), Orlando, and Seattle/Tacoma. Students from these areas will have the opportunity to win a $2,500 scholarship that is renewable for up to three years.

In 2013, the Simon Youth Scholarships program awarded $1.1 million to 389 students nationwide.

“Our mission is to ignite hope for a brighter future in students, and our Foundation is proud to partner with Brea Mall, The Shops at Mission Viejo, Westminster Mall and Del Amo Fashion Center to award scholarships that will remove some of the financial obstacles that would otherwise prevent a student from achieving the dream of a college education,” says J. Michael Durnil, Ph.D., the President and CEO of SYF.

The 2014 SYF Community Scholarship recipients will be selected by Scholarship Management Services, a third-party administrator. Students are selected based on a variety of criteria, including financial need, academic performance, leadership skills and participation in school and community activities. Those students who are the first in their family to pursue a post secondary education will also be given close consideration.

The completed application, along with official school transcripts and parents’ most recently filed tax form, must be sent to Scholarship Management Services by January 11, 2014.
